Grapes from two different parcels in the Paardeberg. Jakkalsfontein Blk 17 (1986), picked on the 23rd of January 2024 and Sky Vineyard, 400m above sea level, picked on 31st January 2024.
Whole bunched pressed, settled for one night and racked to barrel for natural ferment to start. 300 and 228L old French barrels used for fermentation and aging.
After MLF completed, barrels were topped and left to age on the lees until December. The wine is then racked, blended and prepared for bottling.
The wine was bottled on the 18th of January 2025.
