Grapes from two different parcels in the Paardeberg, picked 10days apart and whole bunched pressed, rough settled overnight and naturally fermented in 228L 6th fill French barrels. I picked a little later this vintage, to gauge what the flavours and texture difference would be in comparison to the earlier picking of 2022. After MLF the wine was racked of the gross lees, SO2 added and put back on the fine lees for aging. Bentonite fined before bottling on the 19th of January 2024.
